Baldomero Gas

Baldomero Gas García is the founder and CEO of Miplato.es and owner of Grupo Bodegas Mezquita, in Córdoba. Before starting his own business, he spent four years as a sales representative for Bacardí Martini in Tenerife, saving up for his first venture. His family has been linked to the hospitality trade since the 1960s, and in 1998, at the age of 26, he took over his father's beverage distribution business. In November 2000 he opened a gourmet shop for Córdoba products next to the Mezquita-Cathedral of Córdoba, and in April 2004 he opened the first Bodegas Mezquita tavern-restaurant, the seed of a group that today comprises four tavern-restaurants and a gourmet shop, with a team of around 100 people. Bodegas Mezquita Céspedes was named an "All Time Best" restaurant by Tripadvisor in 2025. In 2015, listening to customers who wanted to bring "their Córdoba" home with them, Baldomero created Miplato.es, a service offering homemade, healthy dishes with no preservatives or additives, chilled for up to 30 days, delivered anywhere in mainland Spain within 24–48 hours. Miplato's central kitchen was recognized at the ANTA association's Excel45 awards. What began as a complementary line of the group became, with the pandemic, a core pillar of the business. Trained in restaurant management, with an MBA and a Master's in Online Marketing, Baldomero sees food as something that goes beyond the plate: eating well to live, perform and take better care of yourself. He combines the day-to-day management of his businesses with speaking and writing about entrepreneurship, resilience and mindful eating.
