In Córdoba, going out for tapas is more than just a tradition: it’s a way of experiencing cuisine, sharing moments, and savoring our region through small bites bursting with flavor. That’s why, once again this year, Bodegas Mezquita is joining in on World Tapas Day in Córdoba with a special menu created just for the occasion.
From June 16 to 30, our four taverns and restaurants will exclusively offer the tapa “Blood Orange Salmorejo with Confit Cod, ” a creation by Chef José Ramón Cuadra that you can enjoy with a small glass of Alhambra beer for just €5.
A fresh tapa with a Cordoba twist
Our offering for this year is the result of combining two well-known, time-honored dishes: salmorejo and remojón. These two fresh, Mediterranean recipes—perfect for hot days—have been reimagined as a tapa with its own unique character.
The result is a blood orange salmorejo with a natural, balanced acidity, served with cod confit in extra virgin olive oil, black olive crumb, and a fresh green chive oil. This combination is designed to let you enjoy the cuisine of Córdoba from a modern, light, and nuanced perspective.
José Ramón Cuadra sums it up this way: “We wanted to create a refreshing tapa, designed for hot weather, in which the blood orange provides the perfect acidity. Paired with a nice cold beer, it’s an ideal way to beat the summer heat.”

What is World Tapas Day?
World Tapas Day is celebrated every year on June 16 and was created by Saborea España, with the support of Hostelería de España, to highlight the tapa as one of the great symbols of our cuisine and culture.
Tapas represent a way of experiencing dining that is uniquely ours: intimate, shared, social, and rooted in the local area. From traditional bars to creative cuisine, tapas are part of Spain’s culinary identity and remain one of the main attractions for visitors.
For the 2026 edition, the official World Tapas Day website already lists the planning of new routes and activities as part of this culinary celebration.
The flavor behind each ingredient
The appetizer “Salmorejo with Blood Orange and Confit Cod” is designed to refresh, surprise, and pay tribute to the familiar flavors of our cuisine.
- Blood oranges replace vinegar and naturally provide the necessary acidity to salmorejo, adding a very special citrusy and aromatic touch.
- The cod confit in extra virgin olive oil adds juiciness, tenderness, and depth to the dish.
- The black olive soil imparts an intense, salty nuance that evokes Mediterranean tradition.
- Green chive oil adds freshness, color, and a very balanced, herbaceous finish.
- An Alhambra beer, brewed in Córdoba, rounds out the experience with a refreshing pairing that’s perfect for this time of year.
