On September 25th, Bodegas Mezquita Corregidor will be transformed to celebrate a unique edition of the Oktoberfest Pairing Dinner. An event that fuses Bavarian tradition, culinary creativity, and internationally renowned craft beers, all under the culinary direction of chef Chema Fernández and with the expert guidance of sommelier Mara de Miguel, named Best Sommelier of Andalusia.
Each dish is designed to take you on a journey through Bavarian lands, from the pretzels and Weißwurst to the veal cheeks, all paired with exceptional beers.

Oktoberfest Pairing Menu
A gastronomic experience designed to surprise lovers of beer and soulful cuisine. Five courses where each dish interprets the essence of Oktoberfest with local products, technique, and contemporary sensibility.
Appetizer
Mini pretzel with Obatzda foam, Märzen beer gel, and pickled radish.
We open the evening with a reinvented classic. Obatzda is the quintessential Bavarian cream cheese: mature Camembert, beer, butter, and spices. Present in Munich beer halls since the 19th century, it is accompanied by Brezn and Radi. A bite that sums up the festive spirit of the Wiesn.
Pairing: Weihenstephaner 1516 Kellerbier — unfiltered, smooth-bodied, and bready notes that harmonize with the creaminess of the cheese and the freshness of the radish.
Starter
Bavarian soup with bread dumplings and Weißwurst.
We start with the Leberknödelsuppe and combine it with the legendary Weißwurst (1857). We make Knödel with Semmelknödel style, enriched with Weißwurst meat. A mild and aromatic dish with a Munich and Central European character.
Pairing: Paulaner Weissbier — fresh and fruity wheat, notes of banana and clove that accompany the delicacy of the soup
Fish
River trout “al espeto no espeto” with Riesling sauce, glazed carrot and warm fennel and apple salad.
Inspired by Oktoberfest Steckerlfisch. Cooked en papillote to maintain juiciness and evoke grilled aromas. The Riesling sauce brings freshness and elegance. The side dishes balance sweetness and acidity.
Pairing: Schneider Weisse Tap 5 Hopfen-Weisse — hoppy wheat with citrus and herbal notes that enhance fish and side dishes.
Beef cheek in Bock beer with spätzle, parsnip and green apple cream, red cabbage chips and mustard air.
Rinderbäckchen slowly braised in Bock to a glossy mellowness Spätzle sauteed in noisette butter The cream balances power and freshness; red cabbage provides crunchy contrast; The mustard aroma adds a Bavarian touch.
Pairing: Schlenkerla Rauchbier Weizen — Bamberg’s smoky icon that intensifies the meat and evokes the embers of the Wiesn
Dessert
The classic Apfelstrudel takes on new life in this version that maintains the dessert’s soul and adds layers of texture. Spiced apple jelly, crunchy pine nut sponge with raisins and dried fruit, a silky vanilla sauce, and dots of whipped cream evoke traditional serving. A delicate and nostalgic end to the feast.
Pairing: Schneider Aventinus Weizenbock — strong and complex wheat, with ripe banana, plum, and caramel, which balances the acidity of the apple and enhances the richness of the dessert
